BLACK BEAN CHILLI

Ingredients (serves 4)

  • 1 brown onion, diced
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 2 tsp smoked paprika
  • 1-2 tsp hot chilli powder
  • 2 tbsp tomato paste
  • 2 400g can crushed tomatoes
  • 2 400g can black beans, rinsed
  • 1/2 jalapeno, diced (I used jarred slices)
  • 1/2 lime, juiced
  • 1/2 tbsp maple syrup
  • Fresh coriander (optional)

Instructions

  • In a medium sized non-stick fry pan heat onion and herbs, and saute until browned
  • Add in tomato paste and stir so that onions are coated
  • Add crushed tomatoes, black beans, and jalapenos, and simmer over a medium heat for approximately 20 minutes – add a splash of water if the chilli appears to dry out
  • Once cooked add in lime juice and maple syrup, and top with coriander to serve

*I love using this recipe for my burritos, tacos, or simply served with some steamed rice

  1. I haven’t loved chili until recently–black beans and sweet potato are probably my favorite additions in a hearty chili! Also, I love how you put your chili in the tacos! How clever!
